1 Pillsbury pudding in the mix yellow cake mix
3/4 cup cold water
1/3 oil
3 large eggs
7 large apples, peeled cored and sliced into slices

Coating for apples

1/3 cup brown sugar
1/3 cup sugar
1 tsp cinnamon

3/4 cup cold butter
1 1/2 cup brown sugar
1/2 cup sugar
1 cup flour
1 tsp cinnamon

Overnight Brine

11 large pork chops

4 cups water

1 cup dark brown Sugar

1 Cup Kosher Salt

5 oz Can Pineapple juice

4 cups ice

In a sauce pot boil water, sugar, salt and pineapple juice until salt and sugar are dissolved.  Let sit to cool in refrigerator for 1 hour ( or spray the outside of the pot for 7 minutes with as cold of water as sink will allow) Add ice, stir until ice is dissolved.  In a large container (or two large containe...

2 to 2.5 lbs of peeled cut up Carrots

1 stick of butter cubed in 4 pieces

1 1/2 cups Brown Sugar

1/2 teaspoon salt

In medium size non stick cooking sprayed cast iron dutch oven ,add carrots, then butter then pour over brown sugar

smoked at 250 for about 4.5 to 5 hours stirring occasionally. 

Let them rest for 10 mintues or so, so that the glaze thickens

You will have a lot of glaze left but necessary to keep carrots from drying...

4lbs Chuck Roast

Morton's Tender Quick

2 Gringos Chupacabra Steak seasoning

2 Vidalia Sweet Onions

Non stick cooking spray

Smoker Temp 250

Smoking time around 6 hours

Smoked Brisket Stroganoff Stuffed Bell Peppers

2 tbs butter
16  ounces large mushrooms, sliced
1 large Onion chopped
20 ounces leftover smoked Brisket
1 Tbs minced garlic
1 cup sour cream
1.5 cups  Heavy (whipping) cream, or Milk
2 Tbs dried Parsley

Corned Beef Brisket Brine Recipe then smoked into Pastrami

(recipe below is per gallon I need 3 gallons to cover a 16 -20 lb brisket so I X3 this recipe)

1 cup quick tender per Gallon (not to be substituted) It's not the easiest to find, thank goodness my local grocery carries it now.

Craw-fish or Shrimp Smoked Stuffed Mushrooms

24 oz fresh mushrooms
1 Stalk celery, finely chopped with food processor
1/4 cup red onion, finely chopped with food processor
1/4 green bell pepper, finely chopped with food processor

Chicken Wings

2 Gringos Chupacbra Cluckalious 

I was using the Mastebuilt 440S smoker with the broiler accessory.  This was really easy and basic, dry your chicken wings with a paper towel, put them on a rack over a pan in refrigerator overnight uncovered.   Next day pat with paper towel to make sure they are dry

I updated this post in 2019.  Started smoker at 225 apple wood in tray the Masterbuilt MES 440S.  I load this a few times and smoked in on setting 1.

My Brisket was 2.59lb 14.66lbs took a picture of the tag.
